Glucan 1,3-beta-glucosidase (EC 3.2.1.58) belongs to the glycoside hydrolase family 3, which is an enzyme family containing a great number of enzymes that hydrolyze the glycosidic bond between two carbohydrates. Glucan 1,3-beta-glucosidase successively removes single glucose units from the nonreducing ends of polymeric and oligomeric beta-glucans, with retention of anomeric configurations.
Existing in higher plants, fungi, and bacteria, the family 3 glycoside hydrolases are thought to play key roles in fundamental biological processes such as the normal growth and development of plant cells, the modification of carbohydrate structure in changing environmental conditions or in the face of pathogen attack, and the microbial degradation of plant residues.
