Endo-beta-1,4-galactanase (AGs, EC 3.2.1.89) is one of the enzymes that catalyze the degradation of type I arabinogalactans (AG). More specifically, this enzyme hydrolyzes alpha-1,4-linked galactan of type I AGs to galactose and galactose oligomers. Based on related studies, this enzyme is classified into glycoside hydrolase family 53.
Arabinogalactans are branched galactans to which arabinose residues are bound as side chains and can be grouped into two types based on the structures of their backbones. Arabinogalactans have many applications as additives. For example, they are mainly used as a replacement for Arabic gum, guar gum, and starch in food, cosmetic and pharmaceutical products. As a hydrolase, endo-beta-1,4-galactanase degrades AGs and contributes to utilization of the plant biomass.
