Hydroxynitrile lyases (Oxynitrilases) catalyze the addition of HCN to aldehydes and ketones thereby forming α-hydroxynitriles, also known as cyanohydrins. Hydroxynitrile Lyase from Arabidopsis thaliana , is used to hydrolyze mandelonitrile.
