The white tomato is an annual or perennial herb in the tomato family, tomato genus. It contains a variety of vitamins, including polyhydrolycopene not found in other tomatoes, such as hexahydrolycopene and octahydrolycopene. Compared to other carotenoids, polyhydrolycopene has no color and can absorb ultraviolet light, reduce free radical production in the body, and prevent melanin precipitation.
