Carrageenan, also known as carrageenan gum and antler alga gum, is a kind of high molecular hydrophilic polysaccharide extracted from red algae with high economic value and is one of the world's three major seaweed gum industrial products (agaricus, carrageenan, and fucoidan). Due to the different sulfate binding forms in it, it can be divided into Kappa type, Iota type, and Lambda type.
