Description
Triacylglycerol lipase is an enzyme with system name triacylglycerol acylhydrolase. This enzyme catalyses the following chemical reaction:triacylglycerol + H2O↔ diacylglycerol + a carboxylate.
Abbr
Lipase, Native (Rhizopus oryzae)
Applications
Lipases are used industrially for the resolution of chiral compounds and the transesterification production of biodiesel.
Enzyme Commission Number
EC 3.1.1.3
Unit Definition
1 U corresponds to the amount of enzyme which releases 1 μmol fatty acid from triglycerides per minute at pH 7.2 and 37 C (olive oil as substrate)
Optimum pH
7.2 (highly active from pH 6.5-7.5)
