Description
Chitinase is an enzyme that can decompose chitin into chitin monosaccharide-N-acetylglucose. The types of chitinase include microbial chitinase, plant chitinase and animal chitinase. The microorganisms that produce chitinase include bacteria, actinomycetes and molds, and chitin produced by different microorganisms. The types and properties of enzymes are also different. Chitinase is widely used in food, medicine, cosmetics, animal feed, agriculture and environmental protection industries.
