β-mannanase is a type of endohydrolase that can hydrolyze mannan oligosaccharides and mannan polysaccharides containing β-1,4-mannosidic bonds and belongs to the hemicellulase class. β-mannanase can break down mannan into water-soluble small molecular sugars, which can effectively remove guar gum and locust bean gum stains left by processed foods and personal care products.
